Earth Burger, located at 656 E. Hopkins St., San Marcos, opened Aug. 19. The plant-based, fast-food restaurant from San Antonio is a vegan and vegetarian eatery and the company’s fourth location. Its San Marcos location was originally set to open in summer 2017 but construction hiccups delayed progress, according to the restaurant's owner.
