Shaping Schertz: New retail hub adding national favorites along I-35

In October, Panera Bread opened as the first tenant at Schertz Station, a 257,000-square-foot retail and dining hub that will feature a bevy of national chain restaurants and other shopping opportunities.

The big picture

The property off I-35 North and Cibolo Valley Drive was developed by San Antonio-based Merit CRE, which is investing over $65 million in the hub.


Schertz’s Economic Development Corp., or EDC, worked with Merit on Schertz Station’s surrounding infrastructure, such as adjacent road construction, EDC Executive Director Scott Wayman said.

Locally owned Dos Gatos Kolache Bakery debuts in New Braunfels

Wanting to spread Czech cuisine with Texas flair in Central Texas, Dos Gatos Kolache Bakery Co-Owner Chase Katz said he had been eyeing expansion for the past couple of years.


Now, the San Marcos-based kolache bakery has opened its third overall location at 1164 FM 306 in New Braunfels.

“This will be your favorite local coffee shop,” Katz said. “There’s so much to love about being here in New Braunfels.”

Northside ISD plans to close high school lunch periods as part of new safety measures


During its Nov. 11 meeting, the Northside ISD board of trustees received an update on the district’s security, which listed a series of measures the district is taking to increase student safety, including closing high school campuses during lunch periods beginning in the 2026-27 school year.

What’s happening?

Presented by Jo Ann Fey, deputy superintendent for administration, the presentation included updates on door monitoring alarms, secure entries, high school lunches, school flasher lights, crossing guard staffing and hazardous route determination.

For campus entry points, Fey said all door monitoring alarm systems have been fully installed and are currently being programmed to meet specific campus needs.


“Every building has either a secure lobby—all of our elementary schools have a secure lobby—or at the campuses that do not have that, we have staff that’s present at the entry, that’s part of the bare minimum compliance from [Texas Education Agency]. So we are fully compliant with that at the moment,” Fey said.

Whataburger opens 4th New Braunfels location

A Texas-favorite burger joint is expanding in New Braunfels, opening a brand new location in the city.


In case you missed it

San Antonio-based burger chain Whataburger opened at 1825 Hwy. 46 on Dec. 15, according to a news release from the business. The new restaurant is the chain's fourth overall location in New Braunfels, according to its store locator.

“Opening our fourth location in New Braunfels is about more than growth—it’s about deepening our roots in an amazing community,” Operating Partner Michael Watts said in the release. “This city has shown us so much love, and now it’s our turn to make sure that every neighborhood has the same access to our fresh, made-to-order goodness."

Texas Roadhouse now open in New Braunfels

A popular nationwide steakhouse restaurant has made its debut in New Braunfels.

Texas Roadhouse opened at 3206 I-35 N. frontage road on Dec. 8. The steakhouse has 730 locations across the United States and in other countries around the world, according to its website.

What they offer

The chain is known for its classic American steakhouse fare, complete fall-off-the-bone ribs and rattlesnake bites. Items like their dinner rolls with cinnamon butter are also free for dine-in customers.
