A Jersey Mike’s Subs franchise is being developed south of Shavano Park.

The setup

Representatives for the East Coast-based chain of sandwich shops said a $250,000 renovation project began late this winter at the Summerfield Crossing retail center to accommodate a new San Antonio location for Jersey Mike’s.

The sandwich shop will replace Bubby’s Jewish Soul Food eatery, which closed in July 2023 after nearly 18 months of service. Summerfield Crossing is located a short distance from Castle Hills and Phil Hardberger Park.

Jersey Mike’s offers nearly 30 fresh-made subs. Cold subs include the Jersey Shore’s Favorite with provolone, ham and cappacuolo, a club supreme, and the tuna fish.

Hot subs on the menu include the Smoky Southwestern Cheese Steak, Mike’s Chicken Philly, and a grilled portobello mushroom and Swiss sub.

What to expect

Company representatives have not provided an opening date for the new Jersey Mike’s franchise. According to a Texas Department of Licensing and Regulation filing, the renovation project at the 1,500-square-foot, former Bubby’s restaurant site will be completed by this September.
