From a coffee shop to pickleball courts, the following eight businesses are expected to open in North San Antonio in 2025, according to prior reporting.

The Mermaid Cafe

The disabled-first coffee shop was founded by Leah Meyer and is owned by her parents Karen and Drew Meyer, with the mission of providing meaningful employment for individuals with disabilities. The cafe will serve coffee and gluten-free baked goods.Dill Dinkers Pickleball

A second location will open in Stone Oak offering five indoor courts, a pro shop and will be available to reserve for private and corporate events. Each court is equipped with ProCushion surfaces, which reduce joint impact, allow for longer playing sessions and minimize noise.Elsewhere Too

Riverwalk bar Elsewhere is opening a second location featuring unique amenities like a 52-foot ferris wheel, a greenhouse pavilion for special events, a flower tunnel, and fire pits near Picks Bar and Fairway Golf Simulation.La Panadería


The bakery will be opening a full-service location in the former Brick House Tavern and Tap in Stone Oak. The new location will include a covered patio. La Panadería’s offers pan dulce, lunch and brunch options, coffee, beer and wine.The Toasted Yolk Cafe

The restaurant offers breakfast, brunch and lunch dishes with a variety of options, such as pancakes, sandwiches, soups, omelets and cocktails. The restaurant will be opening in The Legacy shopping center.Ivy Kids

The early childhood center in Stone Oak will offer a variety of classes, including an infant program, toddler program, a 2-year-old program, preschool program, prekindergarten, enrichment programs, a before and after school program and a summer camp program. The cashless car wash will offer an eco-friendly, 3-minute wash experience. All self-serve bays will be equipped with vacuums, high-pressure air nozzles, windshield washer fluid, microfiber towels, window cleaner and mat cleaning racks.Emerald Townhomes


The new neighborhood began leasing three-bedroom townhomes near Loop 1604 and Bulverde Road in August. Located within North East ISD, Emerald Townes is projected to finish construction on all units in 2025.
