Potluck Hospitality announced March 6 the opening of two new pop-up restaurants at the Pearl’s Food Hall at Bottling Department: Pasta Factory and Three Six General, located at 303 Pearl Parkway, San Antonio.
Pasta Factory is a no-frills pasta concept by husband-and-wife team Orlando and Susana Aguirre who also operate Chilaquil in the Pearl Food Hall, according to Pearl representatives.
A news release said Three Six General is a barbecue eatery founded in San Marcos in 2019 by Mattison Bills, who originally has had plans to run a grocery concept specializing in local sourcing, in-house butchering, smoked meats, charcuterie and natural wine. Bills and General Manager Brooke Dinsmore are leading Three Six General’s first brick-and-mortar location at Food Hall at Bottling Department.
Pasta Factory chef and owner Orlando Aguirre said his menu offers fresh takes on pasta classics, such as fettuccine Alfredo, poblano penne rigate, pomodoro spaghetti, bolognese pasta spaghetti and lasagna.
