2 new pop-up restaurants now open at Pearl’s food hall in San Antonio

Potluck Hospitality announced March 6 the opening of two new pop-up restaurants at the Pearl’s Food Hall at Bottling Department: Pasta Factory and Three Six General, located at 303 Pearl Parkway, San Antonio.

Pasta Factory is a no-frills pasta concept by husband-and-wife team Orlando and Susana Aguirre who also operate Chilaquil in the Pearl Food Hall, according to Pearl representatives.

A news release said Three Six General is a barbecue eatery founded in San Marcos in 2019 by Mattison Bills, who originally has had plans to run a grocery concept specializing in local sourcing, in-house butchering, smoked meats, charcuterie and natural wine. Bills and General Manager Brooke Dinsmore are leading Three Six General’s first brick-and-mortar location at Food Hall at Bottling Department.

Pasta Factory chef and owner Orlando Aguirre said his menu offers fresh takes on pasta classics, such as fettuccine Alfredo, poblano penne rigate, pomodoro spaghetti, bolognese pasta spaghetti and lasagna.

Grilled shrimp, grilled chicken and roasted veggies are all available as add-on options. Pasta Factory also offers tiramisu cake, Aguirre said.

“Following our growth from Chilaquil, we're excited to expand our offerings and share the food that connects our community,” Aguirre said in a statement.

Bills said Three Six General offers fried chicken sandwiches, hot pastrami sandwiches, wings, fries, and mac and cheese, and plans to have more dishes in the weeks to come.

“I love San Antonio and am incredibly thankful to have the opportunity to be a part of this community,” Bills said.

Pearl officials said food offerings from any Bottling Department food hall outlets are available to enjoy on site or to be carried out.
