Eduard Hernandez said one of his passions is getting behind the stove and cooking street tacos. After serving in the U.S. Army, Hernandez said it was time for a change.
“I made friends with someone in the food business, and it piqued my interest,” he said. “From there, I jumped right in.”
After stepping into the local food truck scene in Central Texas, Hernandez said he wanted to open one that he could be in charge of.
“It really gave me the confidence to open my own business,” Hernandez said, citing his past experience running the kitchen at the now-defunct Smokin’ Joe’s Tex Mex Kitchen.
With his passion for cooking came new birria recipes. Birria is a Mexican stew consisting of slow-cooked beef, pork or lamb chops, Hernandez said. It originated in Jalisco, Mexico, and is typically served alongside or inside tacos and quesadillas.
Birria Haus serves slow-braised birria beef, a recipe Hernandez said he has perfected over the years. He also said his form of birria beef emphasizes the traditional slow-cooking process with his own hints of flavor.
“I started learning how to cook birria the traditional way,” he said. “Slowly cooking it for several hours until you find the perfect balance.”

Craving tacos?
Birria Haus offers a variety of street food options, from tacos to quesadillas. Specific dishes include street quesadillas, street tacos, tacos al pastor, customizable ramen bowls and more.
Hernandez said the most popular entrees are the street quesadillas and street tacos.
“It’s the classic street food experience,” he said. "Every plate also comes with authentic rice and beans."
For a bit of fusion, Hernandez said he added brisket birria ramen bowls to the menu, which are also made with the slow-braised birria beef.
“I have a lot more ideas that I really want to add to the menu,” he said. “We’re coming out with a new menu soon.”

Hernandez said he wants to continue serving people and the community in New Braunfels.
“I’m still here because I love being able to serve the community,” he said.
