The Simple Greek opened Feb. 13 in Round Rock offering Mediterranean food in a fast-casual environment. Diners may choose a base of either a pita or a bowl, then customize their meal by selecting from a variety of meats, vegetables and sauces. Also available are Greek savory specialties such as dolmades and spanakopita, and baklava and baklava cheesecake for dessert. The restaurant will celebrate its grand opening Thursday.
