The famed Adobe Verde Tex-Mex cocina and cantina in downtown Gruene has been given a second chance and a fresh appeal after new owner Bob Wilson stepped up to revitalize the popular restaurant.
Wilson, who also owns Billy’s Ice in New Braunfels, said once he heard Adobe Verde closed and was for sale in December, he worked to purchase the restaurant and had a deal drawn up in just nine days.
“[Adobe Verde] was just such a staple of New Braunfels and Gruene, and I’d seen it had been declining over the last few years, and it made me sad like I think a lot of people. And then when I had a chance to do something, I was like, we could bring that back.”
The restaurant reopened on Feb. 10 and has an essentially all-new staff, with Courtney Wilson—Wilson’s daughter—as general manager and Beto Alvarez as chef. Many menu items stayed the same, including the popular frog dip. Some new items include the Texas plate with cheese enchiladas and the mini tacos.
