A locally owned coffee truck in New Braunfels is opening a brick-and-mortar this summer after years of support and changing state laws.
The details
Betty Lou Coffee Co. will be moving from its current location at 231 Landa St. to 1147 N. Academy Ave., owner Courtney Dallimore said. The coffee truck began operations in and around New Braunfels in October 2023 but has grown its customer base beyond what the 40-square-foot trailer can accommodate, Dallimore said.
"We never thought we would grow to this point. So it's just been really awesome to see everybody's support of us," she said.
Dallimore said she is solidifying permitting and is close to being able to begin construction on the building to move in. Dallimore said she hopes to open this summer.
Why now?
In 2025, the Texas Legislatures passed House Bill 2844, which created a state-centralized health permit for food truck owners, according to the Texas Department of Health and Human Services.
The law now requires permits and food truck inspections to be performed by the state entities, rather than individual counties or cities, as previously reported by Community Impact.
With the change in the law, Dallimore said she would no longer be able to use the shop's secondary trailer, mostly used for cold food storage and back stock, which cemented her decision to move to a permanent location.
What they offer
The coffee truck offers a variety of lattes and coffee drinks, like the signature Betty Lou Latte, and a small assortment of baked goods. The menu will remain the same after the move, although there are plans to expand the menu in the future, Dallimore said.
