Binge Kitchen, 128 S. Guadalupe St., San Marcos, held a soft opening in late June. The truck will hold its grand opening July 3. The food truck serves a completely vegan, plant-based food menu. Owners Yaenisha Lyons and Balazs Lovasz offer burgers made with vegan patty, pancakes made from matcha green tea and blueberries, as well as a variety of dinner plates.

Lyons said she and Lovasz make every dish by hand except for the burger patties and avocado chips. Many dishes at Binge Kitchen, including the pancakes and smoothies, are reinforced with flax and chia seeds to add protein. The truck is open from Mon.-Thu. noon-8 p.m., and Friday from noon-6 p.m.

Lyons and Lovasz said Binge Kitchen is one facet of a larger company, Binge Village, they are launching. The pair hope to open a fitness center in addition to their food truck.
