Jimmy’s Burgers and Pizza, a fast-casual spot that has menu items like crab rangoon pizza, served its first customers at its Golden Triangle Boulevard location at the end of September, owner Kris Copp said.

The success at the restaurant’s first location in Hurst ultimately prompted Copp to open the new location.
Jimmy’s Burgers and Pizza is not Copp’s first foray into the restaurant business. He opened Copps Pizza Company, a sit-down bar and grill serving pizza, wings and burgers, in Nebraska before moving to Texas. Copp calls it “the American meal.”
“Unless you’re going to add in tacos, there’s not much that beats wings, pizza and burgers,” Copp said. “We were doing them at the bar and grill, and I was like, ‘Why can’t we make this a fast-food concept?’”
He said his goal was to create an upscale fast-food restaurant with enough variety for everyone.
“When I go out to eat, my kids rarely want burgers,” Copp said. “They always want pizza, and I get sick of pizza really quick, so that’s kind of what did it.”
While Copp said he prefers pepperoni or meat lovers pizzas, he said the hot Hawaiian pizza, topped with jalapenos and house-made hot honey, has been a popular order. There’s also a hot Hawaiian burger.
Going forward
When Copp was searching for the new location, he said a large factor was making sure that it was a more standard building that still had character.
“Build something that’s easily duplicatable,” Copp said. “Simple but good, kind of like an In-N-Out.”
He said the fast-casual model is “the way of the future” and the target plan was always to launch 2-4 stores before franchising.
