Hotel Saint Augustine in Montrose announced in an April 29 news release that it will partner with Houston chef Aaron Bludorn to open Perseid, an all-day restaurant located inside the hotel.

Bludorn—who also founded the Houston restaurants Navy Blue, Bludorn, Bar Bludorn, will launch Perseid this fall.

According to the release, Perseid, named after the meteor shower that peaks in the month of August each year, will offer a menu that pays homage to the global influences defining Houston's food and culture through refined comfort and classic dishes.

"Perseid is a bistro through the eyes of Houston," Bludorn said. "Meaning, we are using the ingredients and inspiration from Houston’s diverse population to create a bistro menu that is accessible and exciting. My inspiration is drawn from bistros in Paris and Lyon and their ability to be consistent and timeless. I have always thought, ‘What if we had that but with Houston as a backdrop?’ and now we will with Perseid."

Perseid will serve breakfast, lunch, dinner and weekend brunches.
