Auden and Lizette Gamboa said they considered many franchises before deciding Smallcakes was the right choice for them.

“It struck a chord with us, because he’s always liked to bake,” Lizette said.

Prior to opening Smallcakes Lantana in 2021, the couple owned a wedding and event-planning business, which Lizette ran. They also worked for a private equity company where Lizette worked in accounting and Auden was in the human resources department. They said all these experiences proved beneficial in running the Smallcakes business.

“We’re a team,” Auden added. “I would bake, and she would decorate at home.”

Representatives from Smallcakes’ headquarters, which is based in Overland Park, Kansas, trained the couple on how to make the cupcakes and ice cream.

“We have 16 signature flavors that we bake fresh every day,” Lizette said. “We also bring in different flavors monthly. We have over 300 recipes the franchise provides.”Auden said the flavors cover a wide range from the basic vanilla cupcake to what he describes as “extreme.”

“We had a bacon, beer and cheese option,” Auden said. “I actually put cheese, bacon bits and a dark lager beer in it.”

They also make ice cream in house. There are six flavors available daily: vanilla, Blue Cookie Monster, Chocoholic, cookies and cream, banana pudding, and mint chocolate chip.

Lizette pointed out they are family-friendly and have something for everyone, including a “Pupcake” for the four-legged family member. One of the perks of working at Smallcakes Lantana is tasting the product. Lizette said when they launch a new flavor, they ask their employees to try it so when customers ask for suggestions, they can speak from experience. The Gamboas said they are pleased with the number of regular customers they have gotten to know over the year since opening. They said customers often come to see them to celebrate an achievement or to pick up a special treat for a loved one.

“I have a regular whose brother lives in a nursing home, and she gets him a peanut butter cupcake every month,” Auden said.
