The Little Acorn hosts a soft opening Jan. 18 at 21149 Eva St., Montgomery, at the former The Skinny Pig location. Owner Terri Walker said the eatery, which will officially open on Jan. 21, has soups, sandwiches and salads as well as The Skinny Pig’s popular skinny bowls. Walker said the eatery focuses on creating organic and gluten-free items.
