Caribbean-inspired fast-casual restaurant Pollo Tropical opened its first Austin location July 22 at 211 S. Lamar Blvd., Austin. The restaurant specializes in flame-grilled chicken marinated in tropical juices and spices, and there are plans to open four more Austin-area locations during the next year.
