All vegan restaurant, Fabrik, relocated from East Austin in mid-July, bringing the tasting room to Tarrytown.
Fabrik owners, Je and Silas Wallerstein, announced the relocation in March after opening on East Martin Luther King boulevard three years ago. The new spot, Je and Silas Wallerstein detailed, will allow the pair more room to grow.
On the menu
Fabrik seeks to combine a chef’s table, fine dining experience and a mom and pop restaurant, according to its website. The menu is curated seasonally, using locally-sourced ingredients to create sustainable and low-impact dishes.
The summer eight-course tasting menu runs $105 per person, starting with sticky leeks and white bean dip and signature bread. Other dishes included mushroom cappelletti, corn cream, maitake and cornbread madeleines for the “black and yellow course.” The tasting menu concludes with a banana miso mousse, roasted banana compote and black sesame sable, as well as some petit treats like a yuzu macaron.
The drink menu
Patrons can add a wine pairing to the experience for $65 per person, which includes five wines from Spain, California, France and Portugal. Fabrik also offers sparkling, red, white and orange wines by the glass or bottle, as well as sake, beer, kombucha and nonalcoholic beer and wine.
About the owners
Je Wallerstein, who also serves as executive chef, brings over a decade of experience in the restaurant industry. She has a diploma in plant-based cuisine from Le Cordon Bleu London and has also completed the Future Food Institute, according to Fabrik’s website.
Silas Wallerstein, who also serves as the tasting room’s restaurant manager, comes from a background in product development and design.

It's been a pleasure to see so many familiar faces come through our new spot, and we're happy to be here creating and sharing our passion with everyone again.”
