Bellaire will be the home of Ramen Tatsu-ya’s third Houston-area location, officials with the restaurant said.

Todd Coerver, CEO of Ramen Tatsu-ya, said they are excited to open a new location in Bellaire.
“We've got a pretty rigorous site analytics tool that we engage that helps us identify where our sort of target customer resides in density, and Bellaire sort of rang the bell on all the key things we look for,” Coerver said. “It's got a great diversity of restaurant offerings, great ethnic food offerings.”
What’s special about it
Ramen Tatsu-ya is different from other ramen shops because the preparation is authentic to how ramen is prepared in Japan, Coerver said.
It began when the founder, Tatsu Aikawa, who was born and raised in Tokyo before moving with his family to Austin when he was a child.
“His dream was really to bring authentic Tokyo-style ramen to the States,” Coerver said. “When we opened the first location in Austin several years back, we believed we were one of the first to actually be doing it in a style authentic to the Tokyo region and how they produce and serve ramen.”
It takes them 60 hours to make each batch of broth, he said.
“Let the marrow from the bones really absorb into the broth that creates that rich flavor that has become signature to us,” he said. “We're the real deal in terms of what you would find in an experience if you went to Tokyo today.”
Coerver added that the Ajitama eggs that are featured in their bowls are also made by an “arduous” process by hand.
“So it's a painstaking effort to create our ramen bowls, but that's what makes it worthwhile in the end for the customer,” he said.

Ramen Tatsu-ya offers a variety of ramen bowls and other bites, including:
- Tonkotsu ramen
- Assari ramen
- Vegan ramen
- Rice bowls
- Gyoza
- Edamame
The restaurant also offers flavor “bombs”, balls of flavor that can be added to ramen, including a spicy bomb, corn bomb or chili bomb.
