Local New England-inspired restaurant Garbo's Lobster will open its third brick-and-mortar in Dripping Springs.

Garbo's was founded in Austin by Heidi Garbo and her two sisters Hannah and Samantha Garbo as a food truck. Since 2013, Garbo's has since expanded into a fleet of trucks as well as restaurants with locations in North and Central Austin.

The Dripping Springs location will consist of 150 seats, a raw bar, wine and cocktails from beverage director Josh Loving, and two event spaces, which are now accepting inquiries for 2024.

Garbo's menu consists of lobster rolls, live lobster dinners, fish and chips, oysters, and caviar.

“In a rapidly growing Austin, where great food is becoming oversaturated, Dripping Springs represents an underserved market for exceptional cuisine," owner Heidi Garbo said in a news release. "It's close enough to Austin to capture the vibrant city vibe but far enough away to truly enjoy the serene setting and the warmth of the local community."
