A new food truck in Buda is serving up fresh, made-from-scratch gumbo, and owner Jay Adams said guests at Big Daddy Jay’s Creole Kitchen can choose seafood or chicken and sausage gumbo, along with red beans and rice, jambalaya, shrimp etouffee, boudin balls, crab cake sliders and shrimp rolls.
