Snooze, an A.M. Eatery will soon be serving pancakes and mimosas in the Pflugerville area.

A newly constructed building, across from Willie’s Grill and Icehouse along SH 130, will house the well-known breakfast and brunch diner, according to a filing with the Texas Department of Licensing and Regulation.

The Denver-based restaurant will occupy 3,850 square feet of space in the new shell building currently under development, according to the filing. Construction for the $1.2 million finish-out is slated to begin this fall, with May 2025 listed for completion of the project.

The eatery serves a familiar diner menu, including pancakes, omelets, Benedicts and breakfast tacos.
