“We grew up in places where the pub wasn’t just where you drank, it was where you gathered,” Robson said. “That energy of catching up with old friends, meeting new ones, and just enjoying good company is exactly what we’re bringing to Parley.”
Behind the name
As stated in a news release, the name “Parley” means “to meet up,” which is what the space will serve to be a spot for in the local community.
During the day, community members can enjoy a coffee bar with espresso and light bites. The bar’s menu includes:
- Boxty Balls; mashed potato and mozzarella croquettes, parmesan, parsley, kimchi marinara
- Krab Rangoon; crispy corn cheese and krab wontons, sweet chili sauce
- Ham and Cheese Toastie; pressed Dubliner cheddar and smoked ham, grain mustard, spicy tomato jam, cornichon
- Spice Bag; five spice chicken tenders and waffle fries, fermented chili relish, curry mayo (sub cauliflower wings)
- Gochujang Buffalo Wings; half-dozen wings, carrot, celery, perilla ranch (sub cauliflower wings)
- Crispy Pork Belly Sliders; sweet chili soy glaze, kimchi fresno slaw, pickled cucumber
- Snack Plate; gochugaru pimento cheese, cowboy candy (candied jalapenos), Opah's smoked beef sausage, grain mustard, green olives, crackers
At night, the space will turn into a bar featuring signature cocktails, beer, natural wines and non-alcoholic options.
