Canyon Grille temporarily closed April 6 ahead of a weeklong transformation into a farm-to-table dining concept under new owner Haythem Dawlett.

Under Dawlett’s ownership, the restaurant will offer a rotating seasonal menu, with ingredients regionally sourced from local farmers, according to a news release.
"Our goal is to build something that truly reflects the local culture and culinary expectations—authenticity and fresh ingredients rooted in Texas,” Dawlett said in the news release. “The Rough Hollow Canyon Grille was created as a place where people come together to enjoy great food, the lake, and time with friends and family. We are simply getting back to our roots.”
The restaurant will also source fresh Gulf Coast seafood multiple times per week.

Local Tony Curtis-Wellings will act as the director of operations. Curtis-Wellings founded Faraday’s Kitchen Store, which provided education and kitchen wares locally in Bee Cave until its closure in 2025. He also brings 20 years of experience in the Lake Travis and Central Texas market, alongside 10 years of experience in opening restaurants.
“This is more than a reopening, it’s a repositioning,” Curtis-Wellings said in the news release. “By working with our current staff to build a culture of welcoming hospitality, staff success and Chef-driven cuisine, we aim to create a memorable, elevated dining destination by the Lake.”
