Chandler Wible, the new owner of Coffee Dog Roastery and Coffeehouse, spent the past six months transforming his business through a refreshed menu.
“Our team has been working quietly behind the scenes to bring this to life,” he said in a social media post.
For Wible and his staff, that meant long nights of testing new recipes.
What we know
With those new recipes finely tuned, Coffee Dog expanded its offerings by introducing a Scoops Chicken Salad Market.
“We are now serving a curated selection of our fresh, made-from-scratch in-house chicken salads,” Wible said.

Beyond its coffee and Scoops Chicken Salad Market offerings, Coffee Dog, which first opened its doors in 2005, sells a variety of breakfast items, including:
Breakfast tacos
New York-style bagels
Croissants
The outlook
Coffee Dog will add more of the Scoops Chicken Salad Market menu in phases.
“Bringing Scoops here isn’t just adding food, it’s doubling down on who we are—independent, community-rooted, scratch-made and built locally,” Wible said. “As national brands continue moving in, we’re choosing to invest deeper. More roasting. More food. More service. More commitment to Bastrop.”
