Today, Hutchins BBQ is co-owned and led by Tracy and Tim Hutchins, who work side by side to carry the brand forward with a shared focus on faith, community and true Texas barbecue.

The Hutchins family’s barbecue roots trace back to 1978 in Princeton, with Tracy and Tim’s father’s restaurant, Roy’s Smokehouse, operating out of a structure connected to the family’s home. Growing up around the pits, and literally surrounded by BBQ, helped shape the values and create the lifelong passion that still defines the business: hard work, hospitality and a commitment to consistency.

A tradition refined over time

At just 22, Tim Hutchins stepped into the family business with little more than grit and determination to guide him. Knowing he had everything to learn, he roamed Texas backroads and barbecue towns, absorbing the craft, discipline and standards behind the state’s most iconic pits. Each lesson hardened his skills and shaped his vision, driving Hutchins BBQ toward the consistent excellence guests now expect every single day.

The restaurant’s turning point came in 2012 when Hutchins BBQ began investing in Prime-grade brisket. That decision placed ingredient quality at the center of the guest experience and reinforced a simple belief: great barbecue starts before the smoker is even lit.

For the Hutchins team, true Texas barbecue does not need to be complicated; it needs time, precision and a steady standard. Seasoning stays straightforward, and the pitmaster stays disciplined, so the meat remains the focus.

Consistency at scale and hospitality that lasts

Hutchins BBQ is known for consistent lunch and dinner hours, something increasingly rare in craft barbecue. Serving at that pace means protecting quality while meeting high demand. The team maintains standards through routine checks before opening, including tasting the full menu and aligning the staff for the day ahead.

The menu reflects the restaurant’s commitment to tradition. Brisket is seasoned simply with salt and pepper, using yellow mustard as a binder, then smoked low and slow, so the meat can shine. The foundation remains what the team calls the Texas Trinity: brisket, sausage and ribs.

Just as important as the food is the culture behind it. Hutchins BBQ has built a reputation not only for what comes off the cutting block, but for how guests are treated once they arrive. Long employee tenure and a family-first mindset help create the kind of hospitality that turns first-time visitors into regulars.

A fan favorite, born from creativity

While the restaurant is grounded in Texas staples, Hutchins BBQ is also known for the Original Texas Twinkie, introduced in 2014. What began as a creative way to use leftover brisket became a signature item: an extra-large jalapeño stuffed with cream cheese and brisket, and wrapped in bacon. It has since become a recognizable part of the brand and even has a national day to celebrate it.

Serving North Texas with purpose

Hutchins BBQ has faced major challenges over the years, which have tested resilience and reinforced the importance of faith, community support and staying grounded in purpose.

Looking ahead, Hutchins BBQ is not focused on opening additional locations in the near future. Instead, Tracy and Tim are investing in the guest experience, growing catering and to-go services, and continuing to serve with the standards that built the brand.

For Hutchins BBQ, great barbecue is just the beginning. What matters is stewardship—honoring a legacy built on faith, standing accountable to the community they serve and earning trust the same way they always have: through discipline, consistency and showing up every single day. This commitment was recognized in 2025 when they were voted Best BBQ in DFW by The Dallas Morning News.
