“Sophie’s began as a passion project that grew into something much larger,” general manager Erin Matthews said.

The Seals family, the owners, saw possibility in the structure long before it became a New Braunfels boutique hotel.

“[The Seals] didn’t want to just restore it; they wanted to reimagine it as a gathering place that honors the spirit of New Braunfels,” Matthews said.

That vision shaped a space where original wood floors and tall windows coexist with world-class art, contemporary textures and unexpected design moments at every turn.

The result is a place that’s deeply tied to the city’s heritage yet effortlessly fresh.

“It’s where old-world charm meets a modern sense of life well-lived,” Matthews said.

Weddings weren’t part of the original plan, but they became part of the property’s identity almost immediately.

“It happened organically,” Matthews said. “Once we opened, couples started reaching out because they wanted something different, charming, design-forward and full of character. They didn’t want a traditional ballroom or barn; they wanted a place that felt personal.”

At Sophie’s Gasthaus, celebrations unfold around the courtyard, the pool and the wraparound porch that give the property its cinematic feel.

The environment encourages couples to be intentional by choosing a space that reflects not just their aesthetic but their outlook.

Those who marry here often gravitate toward design-forward details, good food, meaningful connection and a weekend that feels tailored rather than templated. The property lends itself especially well to Texas micro-weddings and mid-size gatherings, offering full-house buyouts, so couples can host the entire celebration onsite.

“It becomes their private estate for the weekend,” Matthews said.

“Whether it’s creating custom welcome cocktails inspired by where [the couple] met, or styling a ceremony around their favorite piece of art on property, we’re big on the details that make it theirs,” Matthews said.

Instead of relying on a single planner, Sophie’s Gasthaus does things differently.

“We are able to connect the couple with the best local talent, from florists and chefs to musicians,” Matthews said. “That collaboration is what makes each wedding feel so alive.”
