Founded by fine-dining veterans Lance Criswell and Coleman McNabb, this vibrant eatery is making waves with its unique shrimp-focused menu, drawing inspiration from the rich, diverse cultures of Polynesia and Pan-Asian cuisine.

“Shrimp might be the most popular seafood in America, but we’re serving it in ways most people haven’t seen before,” Criswell said. “Shoreline Shrimp is somewhere you can go for fresh, elevated and nutritious food.”

The backstory

The journey to Shoreline Shrimp began years before it opened, sparked by a culinary experiment and a shared passion for something different. In 2018, Criswell was developing a hot sauce for retail when he shared it with his business partner, McNabb. That moment ignited McNabb’s inspiration to explore simpler, healthier food concepts.

“We felt separated from the food we were making and serving at fine dining restaurants compared to what we like to eat,” Criswell said. “We’re chefs, but in our daily lives, we’re eating real food with history and culture. We wanted to create something that reflects that.”

In 2022, McNabb took a trip to Hawaii where he was introduced to Giovanni’s Shrimp Truck, a local favorite known for its simple yet flavorful shrimp dishes. This experience inspired them to reimagine that concept for the mainland, evolving it into a fresh, fast-casual format that combines Polynesian and Pan-Asian influences.

Originally, the concept was envisioned as a food truck, drawing on the casual, approachable spirit of Giovanni’s. But as the idea evolved, Criswell and McNabb decided to take it a step further. A brick-and-mortar location offered more stability, comfort and the opportunity to fully express their culinary vision.

At Shoreline Shrimp, the spotlight is on bold flavors, vibrant ingredients and crave-worthy combinations all anchored by America’s favorite seafood.

  • Fried garlic butter shrimp
  • Korean barbecue shrimp
  • Polynesian shrimp
  • Sweet chili shrimp
  • Teriyaki shrimp

Each dish is elevated with housemade sauces that are all gluten-free, tree nut-free and peanut-free, making them both flavorful and allergy-conscious.

“We avoid allergens whenever possible so everyone can enjoy Shoreline Shrimp,” Criswell said. “One example is our coconut shrimp, which keeps the classic tropical flavor but is gluten-free. Instead of breading, we toss cooked shrimp in Polynesian sauce and top it with toasted coconut flakes. This was our creative approach to accessibility.”

Shoreline Shrimp applies this same careful attention to ingredient quality, using jasmine rice instead of plain white, and fresh kale and romaine instead of iceberg lettuce.

“We wanted to offer elevated, flavorful meals that don’t break the bank, and what you see is what you get,” Criswell said. “Most of our dishes come in under $20, making it easy to enjoy quality food every day.”
