There are two big Robs at Big Rob’s Burgers—father and son.

“Family-owned, family-run,” Rob Garza Sr. said, explaining that his wife, Carolina, does all the restaurant’s accounting.

“Without her, we’d be in trouble,” he said.

Big Rob’s Burgers was born as a food truck in Martindale in 2014.

“We found a food trailer, and we had a little extra cash,” Garza Sr. said. “We thought, ‘Let’s buy it—let’s do it.’”

After two-and-a-half years in Martindale, the truck spent about six months in central San Marcos before, in 2016, the family moved the operation into its current brick-and-mortar location near Plum Creek in Kyle.

Kyle made sense because, while Garza Sr. is from San Marcos, the family has lived in the Steeplechase area of Kyle for nearly 20 years.

“When we moved here [Kyle] was so small,” Garza Sr. said. “It’s changed a lot, but I love it here.”

The customers love the options offered at Big Rob’s, Garza Jr. said. The restaurant has gluten-free choices and lettuce wraps along with traditional buns that are made at Kyle’s New World Bakery. The burgers at Big Rob’s are always made with meat prepared fresh, not frozen, and are offered with toppings such as queso, avocado and bacon. In addition to traditional french fries, meals can be accompanied by sweet potato waffle fries, tater tots, onion rings or a salad.

The most popular items are the fried mushrooms, the fried pickles and the queso-bacon fries.

“No matter what, we sell those daily,” Garza Jr. said.

About a third of the business at Big Rob’s is from call-in orders, which is one of the reasons the family is expanding to a second location—just off I-35—that will open around the beginning of next year.

The new, more centrally located Big Rob’s will have counter service and take call-in orders.

Though the restaurant industry can be tough, the Garzas are optimistic about the future of Big Rob’s.

“It’s not easy.” Garza Sr. said, “But we’re doing so good—I think that makes it a little bit easier.”
