Just around the corner from Grapevine City Hall on Dallas Road sits Bread Haus, a local bakery with German roots that specializes in providing hard-to-find treats in the $4-$5 price range.

The owners, husband and wife Mark and Petra Lively, have shaped their business from what their passions are—food and people.

“We have a lot of people from all over … come not only because we have unique European products … but also because all of our breads are vegan,” Mark said.

Petra was born in Germany and studied food science at the University of Arkansas, where she met Mark. From the beginning, the Livelys said, the bakery has focused on providing products that are not only tasty but also healthy.

“We wanted to do a high-quality product, so we always chose to use organic flours and grains, seeds, and really we’ve done that since day one,” Mark said.

Petra said the bakery avoids trans-fats and uses only cage-free eggs.

The Livelys are advocates for the long fermentation process of the bread, which allows the flour and water to sit for days at a time at different temperatures. The result of this slow process can be found not only in an extended shelf life—it takes several days for a bread made from slowly fermented dough to stale—but also in the flavor.

“I think customers are realizing that you get a lot more flavor by letting it slowly develop over time versus throwing yeast and sugar at something to make it grow faster,”
Mark said.

Bread Haus also sells pies, cookies, almond bars and other sweet treats, which are the bread and butter, so to speak, of the business.

“Bread is where our heart is, but … the cookies help us survive,”
Petra said.

The Livelys said the variety of pastries they serve appeals to the store’s customers, who come in looking for something that conforms to their diet, a sweet treat for a teacher or a little slice of home.

“I think we bring a lot of joy to people who come here,” Petra said.
