Corky’s Ribs & BBQ to bring a taste of Memphis to Cypress

Co-franchisees Andria Cain and Bruce Gingrich are in the process of opening Corky’s Ribs & BBQ at 25618 Hwy. 290, Cypress, where Baker Street Pub & Grill was formerly located. Officials said the full-service restaurant would open in May or June.

Originally launched in Memphis, Tennessee in 1984, the eatery expanded to Katy in early February and also has plans to open in Tomball, The Woodlands and downtown Houston in the coming months.

“Texans love barbecue all the way around, and we wanted to give them something different to try,” Cain said.

The menu features traditional pulled pork sandwiches, pork ribs, brisket, catfish, fried chicken, barbecue nachos, spaghetti, baked beans, loaded macaroni and cheese, fried okra and other Memphis-inspired dishes. Desserts include peach cobbler, banana pudding, pecan pie, key lime pie and chocolate fudge pie with ice cream.

Cain said the restaurant also features catering services, live music, a full bar and a special late-night menu starting after 9 p.m.

  1. Oh lord no. We ate at Corky’s in Pigeon Forge, TN and it was the nastiest BBQ we’ve ever tried! It was dry, way over cooked and tasteless. My brother lives up there and said he tried it again a few months later and it ws just as bad. This place will never last with all the good BBQ joints around here. I feel sorry for the owners.
