Eggs BenedictAt Fielding’s Local Kitchen+Bar, chef Edelberto Goncalves sticks to tradition when it comes to the recipe for eggs Benedict, $14.

“The eggs Benedict is very traditional, but what makes it different is that we make our English muffins in-house,” he said. “We prepare the dough, let it slow-ferment overnight, shape them, proof them and cook them on our wood-fire grill.”

The English muffins are then toasted and topped with a slice of French ham, poached eggs and lemon hollandaise.

“Eggs Benedict is a staple item for American brunch—I don’t think you can open up for brunch if you don’t serve eggs Benedict,” Goncalves said.

At Fielding’s Wood Grill, the $10 eggs Benedict substitutes the French ham with rotisserie bacon. Goncalves said either version is perfect with a signature mimosa flight, $20, or a bloody mary flight, $20.
