As the nationwide economic recession began to affect Sugar Land and Missouri City residents, Roque Baecker decided to open a local restaurant with one primary goal: to offer quality and affordable food. In 2010, Baecker, along with long-time friend and world chef Frdric Perrier, opened Hoggs N' Chicks: A Fine Food Shack off Hwy. 6 in Missouri City.

"We have lived in Sienna Plantation since it opened, and there hasn't been a lot out here until the last few years," Baecker said. "We decided to create something to help feed the masses, and this is really what we wanted to build."

According to the business partners, the name of the restaurant was derived from the variety of pork- and chicken-based menu items. Pork and chicken are among the least volatile food products in terms of cost and are also the most versatile to work with, Perrier said.

"I wanted to do something that focused on fast service and affordable food," he said. "It was my goal to elevate comfort food to a culinary experience."

Baecker has lived in the South his whole life and said he has an appreciation for southern comfort cooking. Perrier is a widely-known chef who owns three local restaurants and has worked in several major cities around the world. The partnership formed to create the menu at Hoggs N' Chicks has resulted in an array of southern-style cooking with an international influence, and everything is made from scratch, Perrier said.

"Most everything will have a distinct flavor or spice," Baecker said.

Items such as the fish tacos ($8.99) can be prepared in a variety of styles—grilled, blackened or fried—and are served with black beans, pineapple–mango pico and a Tabasco remoulade. The menu offers several sliders ($1.99 each), such as the jalapeno glazed chicken slider served with a chipotle mayonnaise and house-made jalapeno jelly. On the other hand, southern favorites like the chicken fried steak ($8.99) keep to the classic flavors and are breaded and fried to order.

In coming years, Baecker and Perrier said they will focus on promoting the Hoggs N' Chicks brand in the area.
