Chicken fajita is served on a wheat tortilla with Jack cheese, sauteed mushrooms, grilled onions and sliced avocado to make the Marie taco at Mario’s Taco and Burger House.

The $2.69 taco is named after owner Mario Abascal’s daughter, who helped her father design the family eatery nearly 10 years ago.

“Because of the name of the restaurant—Mario’s Taco and Burger House—it is my house,” he said. “When you see a name on the menu, that’s my family or places I know.”

The Veracruz fish taco represents his hometown. His wife and grandsons are honored in the Norma nachos, Maksim sandwich and Mateo burrito.

Abascal said inspiration for dishes comes from the cultures of the places he has lived—Mexico, California and Texas. From the homemade salsa bar and breakfast tacos to the charbroiled burgers made with certified Angus beef, he said each order is made fresh.
