Practice the fundamental cuts for vegetables—mince, dice, half moons, matchsticks, chiffonade, and more. Learn how to select a knife that is right for you, and tips for keeping your knives sharp. Enjoy a delicious Provençal Vegetable Soup with Basil Pesto made with the vegetables you prepare.

Students should bring their own chef knife to use in class.
