1. Texas State University graduate opens Cafe Azteca at the Hitch: A Mobile Eatery


Cafe Azteca opened at the Hitch: A Mobile Eatery, 312 E. Hopkins St., San Marcos, in early May. The food truck serves coffee made with Mexican beans sourced from companies in San Antonio and Denver.

Among the truck’s drink offerings are cafe olla, which is coffee boiled with cinnamon and refined sugar, and an iced latte made with horchata. The truck also served pastries such as empanadas and conchas. Texas State University graduate Jonathon Ybarra owns the business. 210-954-9960.

2. Dream Land food truck joins the Hitch: A Mobile Eatery in San Marcos


Dream Land opened at the Hitch: A Mobile Eatery, 312 E. Hopkins St., San Marcos, in early May. The food truck serves a variety of breakfast dishes all day, including chicken and waffles and Nutella and fruit waffles. The truck also serves Hawaiian-style lunch plates, owner Tripp Gordon said. Lunch options include a chopped steak with Hawaiian macaroni salad, rice and house-made brown gravy. 830-837-1007.

3. Buda's new food truck GreenSpace, TX now serves natural juices and smoothies starting 


Owner Jeremy De Alcala will hold a soft opening at 4 p.m. July 1 for his new food truck, GreenSpace, TX. They will begin with serving natural juices and smoothies and soon after expand their menu to include salads, grain bowls and wraps. On August 4, the truck will hold a grand opening. 122 Main Street, Buda.

4. Vegan food truck Binge Kitchen opened on Guadalupe Street on Monday, July 3


Binge Kitchen, 128 S. Guadalupe St., San Marcos, held a soft opening in late June and its grand opening July 3. The food truck serves an entirely vegan, plant-based food menu. Owners Yaenisha Lyons and Balazs Lovasz offer burgers made with vegan patty, pancakes made from matcha green tea and blueberries, as well as a variety of dinner plates.

Lyons said she and Lovasz make every dish by hand except for the burger patties and avocado chips. Many dishes at Binge Kitchen, including the pancakes and smoothies, are reinforced with flax and chia seeds to add protein. The truck is open from noon-8 p.m.Mon.-Thu. and from noon-6 p.m. Fri.

Lyons and Lovasz said Binge Kitchen is one facet of a larger company, Binge Village, they are launching. The pair intend to open a fitness center in addition to the food truck. 5. Plum Treetz opened in Kyle in April.
