Blue Owl Brewing will open on a reservation-only basis Oct. 8 with plans for regular hours still in the works.

The sour-mash brewery at 2400 E. Cesar Chavez St., Ste. 300, has four beers on tap: a sour session wheat, sour pale ale, sour red ale and sour cherry stout. Co-owner Suzy Shaffer said Blue Owl Brewing plans to also launch a raspberry Belgian strong ale in November.

Shaffer and co-owner Jeff Young are both alums of Black Star Co-op brewpub in Crestview, and Davy Pasternak and Jacob Piland round out the brew team.

"We're trying to make things interesting, fun—not being overly serious—and take time to educate people," Shaffer said. "Experimenting is very important to Jeff. Taking things and creating new flavors and continuing to do so. We also feel it's very important to have a fun and comfortable customer experience."

The first canning trial run occurred Oct. 7, and the team hopes to offer cans of Little Boss, a sour session wheat, and Spirit Animal, a sour pale ale, in stores by November.

For now, only tasting room tours are availabe, but full brewery tours will begin in the near future, Shaffer said. Patrons can purchase tickets for a tasting room tour online.

The brewery will be open Wednesday through Sunday when regular business hours are established.
