Grapevine City Council unanimously approved the acquisition of the restaurant’s operations at its Oct. 4 meeting. Approximately $1.7 million will be appropriated to the city’s Golf Enterprise Fund for operations.
Persimmons Bar & Grill opened June 18, 2021, and is located at 3800 Fairway Drive. The restaurant was previously operated by Coury Hospitality, which also runs Hotel Vin and Harvest Hall.
“I think this is a really good decision having the city take it over, so I’m really excited we’re making this adjustment,” Mayor Pro Tem Darlene Freed said in the meeting.
Matt Feryan, Grapevine senior management and budget analyst, said the restaurant has recently hired a new manager, kitchen manager and additional servers. The transition date of operations was Oct. 1, but he said the city took over operation on Sept. 28 in preparation of upcoming events.
Council also authorized vendors for food, beverages and other operational needs. Vendors that will cost in excess of $15,000 must be approved by council. Vendors and approved expenses include $210,000 for Ben E. Keith Foods, $44,000 for Hardies Fresh Foods and $97,000 for Spec’s Family Partners.
Expenses for vendors total $667,000, the meeting documents stated. City documents state the food and beverage revenue is expected to offset the annual expenses of the bar and grill.
Persimmons Bar & Grill offers several appetizers, such as the ahi tuna nachos and pork belly burnt ends, as well as main dishes, such as the hatch chili smashburger, herb crusted chicken and vegetable medley pasta.
