Foxhole Culinary Tavern’s name comes in part from the term for the small pit soldiers would dig for shelter during battle.

Brothers Ryan and Trey Wolslager used the 1920s as inspiration for their industrial, rustic-designed restaurant, which opened in July 2014.

“We started looking through 1920s [popular] slang words … and foxhole came along,” Ryan said. “That phrase, ‘If you’re going to be stuck in a foxhole with somebody, who would it be?’ Me and my brother have a great relationship, so we thought it was kind of cool.”

The tavern, tucked behind wooden slats and green foliage, is decorated with wooden and iron furniture, antique lightbulbs and dark, red wine-colored leather.

“We wanted upscale food [with] fine dining [and] a neighborhood pub mentality,” Ryan said. “We love live music; we love great food; we love great cocktails; we love sports. When we were sitting around thinking about it, we were [saying], ‘You know, I really wish there was somewhere where I could go watch “Monday Night Football” and get oysters and a steak and feel comfortable in there in [my] flip-flops.’”

For “Monday Night Football,” chef Cosme Cavazos Jr. makes special menu items based on the where the home team is from. For example, when the San Francisco 49ers are playing a home game, the chef may choose to make a dish with soft-shell crab.
Foxhole began offering a new brunch menu in mid-September and no longer offers a buffet. The menu now offers options such as banh mi eggs Benedict made with pork belly.

The Texas-inspired new-American regular menu includes steak, shrimp, scallops and game items. Cavazos said inspiration for new dishes comes from his experience, culinary education and imagination.

“Food has always been something that appealed to me,” Cavazos said. “When I was a kid … I would [sneak] into the kitchens at restaurants when we [ate] out, so I’ve always been around food.”
